Great story! I adore Papas a la Huancaina - the one restaurant that served them in this town has closed.

The pink tinge to the sauce that you recall, may be from the use of a red aji pepper instead of a jalapeno, but I'm sure it's delicious either way.

I think there are as many recipes for Papas Huancaina as there are people producing the dish.. we will have it for Thanksgiving breakfast with the kids as they will be far and wide with their opposite sex favorites for the main meal
